I knew crawfish was a big thing in the gulf. I had no idea that there were so many ways to eat it. Other than straight from the shell my favorite so far has been etoufee.
If you’ve never had etoufee, it is kind of like a very thick stew that’s packed with a bunch of yummy creole seasonings. It’s often served on rice or with a ball of rice on top of it it. You can also do it with shrimp or fish, but personally crawfish is the way to go.
